Apricot pie, anyone?

It should have been easy.

All I wanted was an apricot pie recipe. Using canned apricots. How hard can that be?


Turns out, it's pretty difficult.


An hour later and there I sat, searching on the Internet for a recipe that I could adapt. I don't want the pie to be too juicy. Just juicy enough. And flavorful. With a deliciously flaky crust.


A girl can dream.


There are lots recipes using fresh apricots. But I didn't have any. I found a recipe for dried apricot pie. The instructions read: You can substitute canned apricots. I didn't have dried apricots and since my track record isn't so great with substituting items in recipes, I didn't dare try. What if it didn't turn out? I'd already invited guests up for a slice.


Daring? Maybe. Foolish? It appeared the answer was yes. But since the invite had already been accepted, I decided to keep looking.


And then... there it was! (Insert heavenly music here.)


The perfect apricot pie recipe using canned apricots -- crust recipe included.


Trust me on this: I'm not bragging when I say it was delicious! It could have been runny, or too sweet, or I could have burned the crust. I'm surprised and delighted that the crust recipe is the best I've ever tried. Want to try it yourself? Recipes are for sharing. Here it is:


With a happy tummy, I sat back and wondered: what if I'd given up?

I thought about quitting. Just making a pudding pie for our guests. The evening would have been enjoyable. But the apricot pie (my favorite, by the way) made the occasion extra special.


Sweeter because I persisted.
